I love banana pancakes and this is a easy recipe for yummy fluffy pancakes. This recipe will give you about 6 pancakes, I halved the original recipe because my husband doesn’t like banana pancakes. If you want more, just double the ingredients.
Add flour, sugar, salt and baking powder in a bowl, mix well. Mash the banana In a small bowl mash the banana until almost smooth. Whisk in the egg and then add milk and vanilla extract until well blended. Pour the banana mixture and the melted butter in the bowl with flour. Fold the batter gently with a spatula until just blended. Don't over-mix, batter will be thick and lumpy. Bake the pancakes, about 2 minutes on each side, in a non-stick pan with a little bit of butter until they are golden brown.Banana Pancakes
