Banana Pancakes

I love banana pancakes and this is a easy recipe for yummy fluffy pancakes. This recipe will give you about 6 pancakes, I halved the original recipe because my husband doesn’t like banana pancakes. If you want more, just double the ingredients.

Ingredients

  • 3/4 cups all purpose flour
  • 1 tablespoon sugar
  • 1 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 small, over-ripe banana, peeled (the browner, the better)
  • 1/2 cup plus 1 tablespoon milk
  • 1 large egg
  • 1/4 teaspoon vanilla extract
  • 1 1/2 tablespoons unsalted butter, melted

Instructions

1

Add flour, sugar, salt and baking powder in a bowl, mix well.

2

Mash the banana

3

In a small bowl mash the banana until almost smooth.

4

Whisk in the egg and then add milk and vanilla extract until well blended.

5

Pour the banana mixture and the melted butter in the bowl with flour.

6

Fold the batter gently with a spatula until just blended. Don't over-mix, batter will be thick and lumpy.

7

Bake the pancakes, about 2 minutes on each side, in a non-stick pan with a little bit of butter until they are golden brown.
